This recipe is one of my favorites to make when it is cold outside. It just warms you up quickly and it is easy to make plus it makes a ton, which means we have leftovers that can be frozen and used later (#mealprep). If you make this recipe and love it as much as I do, please tag us on instagram!
Prep time: 15 minutes
Total time: 15 minutes + 35 minutes = 50 minutes
Ground beef | 1 pound
Kidney beans (low sodium) | 1 can
Crushed tomatoes | 1 can
Onion | 1 med. (chopped)
Garlic | 6 cloves
Red bell pepper | 1 (finely chopped)
Chili powder | 4 tbsp
Cumin | 2 tsp
Paprika | 1 tsp
Oregano | 1 tsp
Red pepper flakes | 2 tsp (optional)
Salt & Pepper | to taste
Sauté chopped onion, red bell pepper, and minced garlic for about 5 minutes.
Add spices and ground beef. Let meat cook through.
Add crushed tomatoes and beans. Let simmer for about 25 -35 minutes.
This can be served over rice or eaten alone.
